Ginger Miso Mushroom Spaghetti

Ginger is what changed this recipe for me. Here is a simple recipe with a few colorful ingredients that will fill you up and put a smile on your face this fall! Take a look at my video and see it in action!

12 oz spaghetti (turmeric spaghetti if available)

spray oil or olive oil to coat the pan

5 scallions (sliced)

1/2 cup ginger (julienne or matchstick cut)

5 cloves of garlic (minced)

1/3 cup of white miso (4 tbsp if you want less for the recipe)

2 cups reserved pasta water (or more if needed)

3 cups mixed mushrooms (sliced)

1/2 cup parmesan cheese (grated)
