Pancetta Stuffed Portabellas

So, my coworker brings his son over once a week to help me mow my lawn…ok…he mows the lawn…and I do everything else.  If I’m home when they come over to do this, I try to figure out what new thing to try out on them when I have the time.  I went to an Italian deli to do some shopping….let’s see….what could I put together with some simple ingredients?   I picked up some pancetta, eggs, pecorino cheese, and portabellas.  I hollowed out the middle, made the simple stuffing and covered it with cheese and popped a little color with a sliced cherry tomato.  The robust earthiness of the mushroom is almost like a burger, but healthier.  The pecorino cheese is mixed with the breadcrumbs and gives it the right amount of saltiness and then the pancetta…oh the pancetta…gives it a hearty, salty, meaty bite!  It’s filling as an appetizer or a meal if you have two 🙂

Pancetta Stuffed Portabellas

5 portabella mushrooms (large)

5 oz pecorino cheese (grated)

5 oz pancetta (chopped)

5 oz fresh mozzarella (thick slice 1 oz each)

1 cup breadcrumbs (or 4 slices of bread, toasted & put in food processor)

1 egg

3 cherry tomatoes sliced for garnish

Preheat oven to 400 degrees.  In a dry saute pan,  heat it up on medium heat and add pancetta.  Let it cook until browned on all sides (about 5 minutes).  Combine egg, breadcrumbs and cheese and pour into the pancetta.  Stir constantly and the egg will cook (1-2 minutes).  Cut and scoop out the stem.  Fill in each portabella with the stuffing.  Lay the mozzarella slices on each portabella mushroom.  Sprinkle with salt and pepper.  Slice the cherry tomato and put on the top as a garnish. Bake in the oven for 15-20 min or until the cheese is melted.  Enjoy!
